This is another recipe from the 30 minute cookbook. I really wanted to make some fishcakes, but could n't use a normal recipe because of the breadcrumb coating. I am still avoiding wheat and dairy at the moment so this was a big no go area.
These fish rosti were great, salmon and potato, spring onion, ginger corriander leaf, lemon juice and a bit of salt and cayenne pepper all mixed together and formed into little patties. It was a really simple but really effective dinner - we just had a little salad with it and some chilli sauce for dipping.
I think this recipe is a winner and I will make this instead of standard fishcakes in future, even when wheat is available again. It was so much easier not having to fiddle about with coating the patties in breadcrumbs and I really didn't miss it. The extra's of the ginger, corriander and cayenne gave them such an interesting flavour as well.

Chocolate Brownies
Ok, so this is technically not a 'dinner', but look at them! How could I not include this one.
This brownie recipe is from Cakes and Slices (ISBN: 9781741960693). The book is an absolute bargain and the recipes work amazingly well.
I actually received the book as a gift from some of the lovely people I work with. I feel the need to repay this kindness with regular batches of these and this seems to go down rather well.
I am still not allowed wheat or dairy which, unfortunately makes these 'out of bounds'. I am therefore having to settle for the role as a feeder but I still enjoy making these.
I have tried several brownie recipes and these are the simplest and the tastiest!

Cajun Spiced Chicken
Ok, so after a bit (a lot) of a delay, i thought it was about time this blog got underway again. So here we have Cajun Spiced Chicken - recipe taken from the 30 minute cookbook by Jenni Fleetwood.
I love these 20 and 30 minute books, they are perfect for mid week meals when we both get in late and don't want to be waiting ages for dinner, but they also allow you to feel like you have actually cooked something worthwhile, fresh and balanced.
I am on a wheat and dairy free kick at the moment so we are working around that and this recipe allowed me to do that.
It is really simple to create this rub for the meat, speedy to cook and tastes lovely. It looks a little black in the picture, but it is supposed to look that way and trust me, it tasted great.
